Melt the butter and keep it aside to cool.
Mix the whole egg, egg yolk and caster sugar in a bowl.

Then add the melted butter and then the pistachio and 00 flour. Mix vigorously until a smooth dough is obtained.

Grease the moulds and pour in the mixture, taking care to leave two fingers from the edge.
Bake the cupcakes at 175° for 15 minutes.
Remove from the oven, turn the cupcakes out onto a plate and sprinkle with icing sugar.
