Donuts with Pistachio Cream

 500 g potatoes
 500 g 0 flour
 80 g sugar
 2 eggs
 100 ml milk
 a pinch of salt
 5 g brewer's yeast
To decorate
 Pistì pistachio cream
 chocolate beans of various kinds

Boil the potatoes, peel them, mash them in a potato masher and let them cool. In a bowl, mix the flour with the sugar, add the milk in which you have dissolved the yeast, then the melted butter (not too hot), the pinch of salt, and finally the eggs. Then add the potatoes and knead until the dough is smooth and homogeneous. Leave to rise for about 3 hours.

Once the dough has risen, on a pastry board form some strings of about 12 cm and close them in the shape of a doughnut.

Fry in hot oil over moderate heat.

Prepare the Pistì cream in a saucer
