Trascorso il tempo, rovesciare l&#8217;impasto sul piano di lavoro, dividere in 7 pezzi di ugual peso, formare delle palline regolari e posizionarle distanziate su una teglia foderata con carta da forno. Fare lievitare coperti con un canovaccio fino al raddoppio di volume. Spennellare i panini con la miscela di tuorlo e latte, cospargere con la granella di pistacchi. Cuocere nel forno gi\u00e0 caldo a 190\u00b0- 200\u00b0C per 15\/20 minuti circa fino a doratura. Sfornare e fare raffreddare su una granella.<\/p>\n<p>F\u00fcr die F\u00fcllung: Die Auberginen in Scheiben schneiden und grillen; mit nativem Oliven\u00f6l extra, Minze (oder Basilikum, falls gew\u00fcnscht) und Salz w\u00fcrzen. Die Tomaten in Scheiben schneiden.<\/p>\n<p>Die Fleischmedaillons zubereiten: Fleischb\u00e4llchen formen, in die Hamburgerform legen und gut andr\u00fccken, mit verschiedenen Kr\u00e4utern und Gew\u00fcrzen nach Geschmack, nativem Oliven\u00f6l extra und Salz w\u00fcrzen. Einen Grill oder eine Grillplatte erhitzen und die Medaillons 5 Minuten pro Seite garen.<\/p>\n<p>Zusammensetzen: Die Sandwiches in zwei H\u00e4lften teilen und einige Augenblicke auf einer hei\u00dfen Grillplatte r\u00f6sten, wobei die zu belegende Seite zur Grillplatte zeigt. Den Boden jedes Sandwiches mit einer gro\u00dfz\u00fcgigen Schicht Pistazienpesto, den (zuvor gewaschenen und abgetrockneten) Salatbl\u00e4ttern, der Tomatenscheibe, dem Fleischmedaillon, der Scheibe ger\u00e4uchertem Scamorza und der gegrillten Aubergine belegen, mit den getrockneten Tomaten abschlie\u00dfen und vor dem Schlie\u00dfen des Sandwiches eine Schicht Pistazienpesto auf die Innenseite der Schale streichen.
